Potatoes are one of the culinary gifts to the modern world received from the ancient inhabitants of the Andes. You can use the hollow core as a backing sofa when serving, or mix with some of the stuffing stuff and bake or fry it yourself. If you have smaller potatoes but want an egg in the filling, you can separate the egg yolk.
